This past weekend on Feb. 17, 2018, it was National Random Acts of Kindness Day, so we made some potato patties with our Fair Trade Saffron and shared them with the homeless near our office in Los Angeles. The simplest gestures of kindness can help make someone's world a little less hard. A smile, a hand-written note, holding the door, and so on. It's easy and it doesn't cost a penny. Try this delicious dish at home! It's so easy and good.

7 medium size potatoes or 3 cups of cooked and graded potatoes
3 eggs
1/3 teaspoon powdered saffron dissolved in a tablespoon of hot water
1 teaspoon salt
1/2 cup oil
Directions:
Wash, scrub and rinse potatoes. Place potatoes in a large pot and pour enough water to cover them plus an extra inch of water. Cook for about 30-40 minutes until the center of the potatoes are well cooked and then drain and set aside to cool.
Peel and grind potatoes, add salt, eggs, and saffron. Mix thoroughly.
Let the mixture sit for about 15 minutes before cooking. Meanwhile, heat your oil in a non-stick frying pan and take a small scoop of the mixture and gently flatten the scoop in your pan.
Fry on both sides until it's golden and ready to be served. Potato patties also go great with plain yogurt. Give it a try and enjoy!
